This course will present principles of nutrition through the study of human metabolism and nutrients essential to human life. Emphasis will be on understanding therapeutic nutrition recommendations related to disease processes, as well as nutrition needs for health through the life cycles and for physical performance. The course will include practical experiences in assisting individuals in diet modification, community service related to food production/consumption, and research of specific diet recommendations.

Learning Outcomes

Identify the basic components of nutrition and apply the scientific process to nutrition
Define dietary guidelines, recommendations for Nutrient Intake and demonstrate use of diet analysis
Examine Complementary and Alternative nutrition and justify the use of dietary supplements
Recall the fundamentals of digestion and identify how nutrients influence digestion and absorption in normal and disease conditions
Summarize carbohydrates, lipids, protein and their components and extrapolate their use in diets.
Demonstrate and understanding of metabolism and predict how it influences energy balance, body composition and weight management
