This course provides detailed descriptions of a broad spectrum of career choices as well as information on specific practice areas in which today’s nutrition professionals are employed. In addition, this course covers emerging areas of practice that require specific knowledge and skills along with a broad understanding of community health needs. The course takes a conceptual approach that includes historical background, educational requirements, and roles and functions of nutrition professionals.

Learning Outcomes

Discuss dietetics including the history, influential leaders and growth of the profession
Explain the American Dietetic Association, including its strategic plan. Governance of the association and affiliated units
Explain and list the educational preparation and credentialing in dietetics
Discuss the ethical practice, political awareness and legal basis of the dietetics profession
Evaluate and discuss the responsibilities and functions of the dietitian in clinical practice, including their role in a clinical nutrition service team
Evaluate and discuss the responsibilities and functions of the dietitian as a nutrition manager in the food service industry
Define the roles, responsibilities and functions of the dietitian in the community nutrition practice
Define the roles, responsibilities and functions of the dietitian in business, education, healthcare and wellness.
Discuss the role of the dietitian as manager, educator and leader
Discuss the importance of dietetics research
Understand the governance of dietetics practice, the scope of the ADA practice framework, the standards of professional performance and the code of ethics for the profession of dietetics
Locate, understand and apply established guidelines to a professional practice scenario
Identify and describe the roles of others with whom the registered dietitian collaborates in the delivery of food and nutrition services
Understand the role of and be able to assign appropriate care activities to the registered Dietetic Technician, considering the needs of the client or situation, the ability of support personnel, jurisdictional law, practice guidelines and policies.
