Program Planning for Health Educators Online

Students will explore the different learning models that health educators commonly use to educate the community.  Students will learn how to create learning objectives for the curriculum development.  Students will learn how to create health marketing messages that follow governmental guidelines (Health Education Curriculum Analysis Tool (HECAT)) including literacy levels.

Foundations of Health Education Online

This course will examine the historical aspects of public health and how health education made an impact on health behaviors and outcomes.  Students will also be introduced to and analyze several different health behavior models including the Transtheoretical Model (Stages of Change), Health Belief Model, and the Precede/Proceed model.

Nutrition Biochemistry II Online

This course reviews the relevant concepts of the biochemistry of micronutrients. This review includes the structure, biochemistry, biological function, digestion, absorption, transport, storage, and metabolism of vitamins, minerals, and water with an emphasis on their role in maintaining biochemical and physiological integrity in body systems.

Nutrition Biochemistry I Online

This course reviews the relevant concepts of biochemistry of macronutrients, including the structure, biological function, digestion, absorption, and metabolism of proteins, hormones, enzymes, amino acids, dietary fibers and carbohydrates, and lipids. Graduates of this course will demonstrate a strong theoretical understanding of the control mechanisms and the integration of the macronutrient metabolic pathways at the cellular and the whole-body level.

Introduction to Integrative Health Sciences Online

This survey course will explore the field of integrative medicine, building familiarity with the variety of holistic health practices that fall under the complementary and alternative medicine (CAM) umbrella along with their fundamental or core concepts, methodologies, and theoretical foundations.
