This graduate-level course explores the critical role of nutrition in the prevention, management, and potential reversal of chronic and acute diseases. Students will examine evidence-based dietary interventions for diseases such as cardiometabolic, endocrine, immune and autoimmune, gastro-intestinal, renal and pulmonary. The course integrates biochemical, physiological, psychological and clinical perspectives to assess how specific nutrients, dietary patterns, and lifestyle factors influence disease progression and patient outcomes. Emphasis will be placed on current research, case studies, and the application of medical nutrition therapy (MNT) in clinical and community settings. By the end of the course, students will be equipped with the knowledge and skills to develop personalized nutrition strategies and plans for diverse populations, considering ethical, cultural, and practical factors.
Analyze the biochemical and physiological mechanisms through which nutrition influences the development, progression, and management of chronic and acute diseases.
Evaluate current research and evidence-based dietary interventions for the prevention and treatment of diseases such as cardiometabolic, endocrine, immune and autoimmune, gastro-intestinal, renal and pulmonary.
Apply principles of medical nutrition therapy (MNT) to develop personalized nutrition plans tailored to specific disease conditions and client needs.
Evaluate the impact of dietary patterns, nutrient intake, and lifestyle factors on disease outcomes using clinical data, including lab assessments and drug-nutrient/botanical interactions.
Integrate knowledge of nutrition science with cultural, ethical, and socioeconomic considerations to develop realistic and effective dietary interventions.
Interpret and communicate nutrition-related findings to healthcare professionals, patients, and the public in both clinical and community settings.
Develop strategies for implementing nutrition-based interventions in healthcare settings, public health programs, and policy initiatives aimed at disease prevention and management.
