Helen (Eleni) Delfakis earned her Bachelor and Master of Science in Dietetics from the University of Arizona, and the Registered Dietitian (RD) credentials post-graduation through and internship program between the University of Arizona and the Commission for Dietetic Registration (CDR) in 1987, which is the credentialing agency of the Academy of Nutrition and Dietetics. Eleni has been an active member of the Academy of Nutrition and Dietetics and several of its Practice Groups: Dietitians in Integrative and Functional Medicine Dietetic Practice Group; Sports, Cardiovascular and Wellness Nutrition (SCAN); Weight Management Group; Food and Culinary Professional; Nutrition Entrepreneurs, Dietitians in Business and Communication: the Arizona Dietetics Association, and has been recognized with numerous accolades within her field of expertise and practice. Eleni’s professional experience in nutrition began while researching her master’s thesis at the Pascua Yaqui Health Department and Clinic in Southern Arizona where she developed a nutrition education program. Following graduation from the University of Arizona, she accepted a position at Unified School District in Southern Arizona where she developed a nationally recognized Food Service Management and Culinary Arts Program and served as program director and faculty of nutrition course. During this time, she also accepted an authorship opportunity and became the lead author for a Food Service Management textbook, teacher’s manual and student workbook (1991). To further her culinary experience, Eleni began a new venture and created an award-winning fine dining restaurant with an excellent reputation for food quality and service! And in 2001, she started writing her second book- Healthy Living from a Greek Island-a nutrition guide and cookbook, which was published in 2003. Since then, she founded a diet and health website and continues to enjoy writing and teaching holistic nutrition and health and wellness courses.
